\n3 albums (100 g) or 12.5 g of albumen powder<\/a>
\n20 g jelly<\/a>
\n25 g maple syrup<\/a>
\na pinch of salt
ghi<\/a> to grease the baking pan<\/p>\n

SUBSTITUTIONS
\nYou can use honey instead of maple syrup, but I prefer maple syrup because it has a more neutral flavor (especially our Fancy Maple, which doesn't taste like caramel)
\nYou can use the Better Sweet<\/a> (5 g) or the\u2019erythritol<\/a> (25 g) instead of maple syrup, this way they will have fewer calories (116 kcal) and will also be ketogenic!<\/p>\n

PROCEDURE
\nIf you're using powdered egg whites, dissolve 12.5 g of egg whites in 87.5 g of water and let it sit for at least 10 minutes
\nIn a non-stick saucepan, melt the gelatin in 60 ml of water; it will become hard, don't worry. Wait 10 minutes.
\nBeat the egg white until stiff peaks form
\nPlace the small saucepan with the gelatin on the stove (over very low heat) and let it melt, then slowly pour it into the egg whites while continuing to beat them
\nAdd the maple syrup in a thin stream and continue beating
\nGrease a baking sheet with butter
\nPour in the mixture and smooth it out with a spatula
\nLet it sit in the fridge for at least 2 hours
\nGrease a knife with butter and cut into cubes
\nSprinkle with arrowroot<\/a> or other starch (optional)<\/p>\n

You can also add blended fruit or freeze-dried fruit powder.<\/p>\n
