INGREDIENTS

4 eggs
80 ml coconut oil
120 ml coconut milk (100 ml hot water + 4 scoops of coconut milk powder)
120 g coconut flour
120 g erytritol
Juice of 1 lemon
Zest of 1 organic lemon
1 teaspoon phosphate-free yeast
Pinch of salt

PROCEDURE
Preheat the oven to 180°.
Using an electric whisk, beat the eggs with the oil, coconut milk, lemon juice, and lemon zest.
Add the erythritol and the pinch of salt, continuing to whisk.
Finally, add the flour and baking powder.
When the mixture is compact and smooth, pour it into an 18 cm baking tin and bake for about 25–30 minutes, until golden brown.
Dust the surface with powdered erythritol.
