INGREDIENTS
5 Smart Crêpes
5 Smart Crêpes 300 g zucchini sautéed with oil, onion, and salt
100 g ricotta
3 eggs
Parmesan cheese to taste
Salt and pepper

PROCEDURE
Preheat the oven to 200°.
Prepare the crêpes
Cover a baking pan with parchment paper, line the pan with four Smart Crêpes, leaving a portion hanging over the edge.
Combine all the filling ingredients until smooth.
Place it in the pan lined with the crêpes.
Place the fifth crêpe in the center and fold the others toward the center to completely cover the filling.
Brush the surface with beaten egg.
Bake for 30-35 minutes until golden brown.

Elena's note: For an alternative version, you can also add one or two sachets of saffron to the filling ingredients.
