Tumblers layered pannacocca and Magic Powder

This is a perfect after-dinner treat, a mouth-watering snack or a treat you just can't pass up! You can compose it any way you like, following the color order you prefer and changing it according to your taste!

  • The base was made with chopped almonds, 1 date and the coconut oil. Instead of almonds you can use dried cookies you have at home.
  • The panna cocca was made gelling the Live Better coconut milk with agar agar, an algae that creates a gel. You can also use isinglass.
  • The coulis was made with raspberries. The tart flavor of the raspberries goes well with the round flavor of the coconut cream and of Magic Powder.
  • The shot glasses were decorated with our sfiziosissimo Crunchy Cao and qa few toasted almonds

This is a perfect after-dinner treat, a mouth-watering snack or a treat you just can't pass up! You can compose it any way you like, following the color order you prefer and changing it according to your taste!

The base was made with chopped almonds, 1 date and the coconut oil. Instead of almonds you can use dried cookies you have at home.

Panna cocca was made by gelling the Live Better coconut milk with agar agar, a seaweed that creates a gel. You can also use isinglass.

The coulis was made with raspberries. The tart flavor of the raspberries goes well with the rounded flavor of the coconut cream and the Magic Powder.

The small glasses were decorated with our very tasty Crunchy Cao and some toasted almonds

Ingredients

For 4 small glasses 8 cm diameter
(If you use smaller cups, you will get more).

For the base:
100 g chopped almonds
25 g coconut oil (melted in a water bath)
1 medjoul date

For the clotted cream:
210 ml of boiling water
70 g Live Better coconut milk powder
ยฝ vanilla stick cut lengthwise
1 scant teaspoon of agar agar or 5 g of isinglass

For the Magic Powder layer:
140 ml boiling water
130 g scoops of Magic Powder

For the raspberry coulis:
2 125 g tubs of raspberries
1 cucchiaino di maple syrup Fancy Maple Live Better (o altro dolcificante a tuo piacere)

Squeeze the mixture between your hands. If it stays together, it's perfect for forming your base.

Spread the mixture over the bottom of your small glasses and level them well.

Refrigerate.

For a more traditional version you can use: dry cookies (like Digestive) and melted butter

If you use isinglass, put your 5g sheet in a bowl of cold water.

Bring to a boil and stir for 2-3 minutes over very low heat.

If you used isinglass, squeeze it out and add it now. Swirl well with a whisk to dissolve it.

Add your cream cocca to the small glasses, let cool and place back in the refrigerator.

Heat the water, then add the coconut milk powder, the half vanilla pod cut vertically with a knife, and the agar agar.

If you use isinglass, put your 5g sheet in a bowl of cold water.

Bring to a boil and stir for 2-3 minutes over very low heat.

If you used isinglass, squeeze it out and add it now. Swirl well with a whisk to dissolve it.

Add your cream cocca to the small glasses, let cool and place back in the refrigerator.

When the clotted cream has firmed up you can make the Magic Powder!

Bring the water to a boil, add the mixture, stir well with a whisk and add it to your small glasses. Let cool and put back in the refrigerator.

Raspberry coulis

Place two tubs of raspberries in a nonstick saucepan. Add 3 tablespoons water and 1 teaspoon maple syrup. Bring to a simmer. When it starts to tighten, it is ready. Strain it through a colander to remove the seeds from the raspberries, which are very annoying under the teeth.

Make a thin layer in your small glasses and put them back in the refrigerator.
