Just think, this entire pan of pizza has only 35 grams of carbohydrates and a whopping 13 grams of protein (just the crust). By adding the toppings, we can increase the protein and fat content, further contextualizing the carbohydrates.

Contextualizing carbohydrates means eating them alongside, or even better after, fats, proteins, and fiber. This slows down the digestion of carbohydrates and therefore the absorption of glucose into the blood. This will gradually raise blood sugar levels.

INGREDIENTS
4 fresh egg whites or 4 scoops of powdered egg whites + 100 ml water
50 g oat flour
Salt and spices to taste

PROCEDURE
Preheat the oven to 185°C (350°F)
Beat the egg whites with a pinch of salt until stiff.
Sift the oat flour into the batter, stirring constantly to avoid lumps.
Add the spices.
Spread the dough onto a baking sheet lined with parchment paper and greased with extra virgin olive oil.
Bake for 10 minutes.
Season to taste and bake again for 10 minutes.
