Just think, this entire cake has only 58 grams of carbohydrates and a whopping 53 grams of protein!
INGREDIENTS
4 eggs
80 g erytritol
50 g arrowroot or cornstarch
300 g Greek yogurt (full-fat, not low-fat)
PROCEDURE
Preheat the oven to 150°C (300°F).
Separate the egg yolks from the whites and beat the whites until stiff.
Combine the egg yolks, yogurt, and erythritol and beat with an electric mixer until smooth.
Add the arrowroot, sifting it to avoid lumps.
Gradually add the egg whites, stirring from the bottom up.
Pour the mixture into an 18 cm cake pan.
Bake in a bain-marie for 30 minutes.
Lower the oven temperature to 140°C (280°F) and bake for another 30 minutes.
Turn off the oven and leave the cake in the oven for another 15 minutes without opening the door.
Dust with powdered sugar or erythritol and voilà!
