Ciò che resta è puro grasso, con un punto di fumo di 250°C, dovuto alla presenza di ben il 70% di grassi saturi. Il sego invece si ottiene cuocendo a bassa temperatura il grasso di manzo. Anche in questo caso il prodotto che si ottiene è puro grasso, con un punto di fumo leggermente più basso, 230°C, in quanto contiene meno grassi saturi, solo il 50%. Entrambi contengono omega 3 e vitamine A, D, E, K. Il ghi ha un sapore più delicato, il sego più deciso. Entrambi contengono pochissimi omega 6. Curiosità: prima dell'avvento degli oli vegetali, per friggere si utilizzava sego o lardo a seconda degli animali maggiormente disponibili nell'area geografica.
