Lemon chicken

INGREDIENTS

500 g chicken breast
Arrowroot q.b.
Lemon juice
Salt to taste.
Ghi o Sego for cooking

PROCEDURE

Cut the chicken breast into chunks of uniform size.

Transfer to a bowl and add just enough arrowroot to coat all the pieces well, mixing with your hands.

Heat a frying pan with ghee or tallow. When the fat is hot, add the chicken without overlapping it and cook it over medium-low heat; it should not brown.

Add the lemon juice and salt only at the end, stir and cover for 1-2 minutes until fully cooked. If the lemon should be too runny, remove the lid and let it dry to the desired consistency.
