Better than butter!

Clarified butter, i.e., protein- and lactose-free. Smoke point 250°C (butter 170°C, olive oil 190°C) so perfect for cooking! It can also be used raw. It contains omega 3 and vitamins A, D, E, K. It can be stored at room temperature. In English it is called ghee, in Italian ghi.

Perché non produciamo in Italia? Perché non c’è nessuno in grado di fare un prodotto ai livelli del nostro attuale fornitore. Il processo che utilizzano permette di ottenere un ghi dal sapore delicato senza quel retrogusto “caramellizzato” che a me non piace. Quando si usa questo tipo di ghi il sapore del piatto finale non viene in alcun modo modificato ma solo esaltato.

La data riportata sui prodotti NON freschi non è la data di scadenza, ma il TMC.

TMC significa Termine Minimo di Conservazione e NON è una data di scadenza. Il prodotto è sempre perfettamente commestibile dopo questa data. Quando su un prodotto leggete “da consumarsi preferibilmente entro…” significa che non è una data di scadenza ma il TMC termine minimo di conservazione.

PLEASE NOTE: Our products are very stable because they are in powdered form and contain mainly saturated fats, which are naturally very stable. We have tested many of them even more than one year past their TMC date, and they were still in perfect condition, including coconut milk, cocoa powder, erythritol, and arrowroot.

How to tell if a product is still good? Very simple!
Just take a look: are there any signs of mold, insects, or anything unusual?
Smell: smell?
If the answers to these two questions are no, the product is still good.

Think about this: the expiration date was invented 50 years ago. Humankind has existed for 2.5 million years. Your senses are perfectly capable of recognizing a product gone bad. Trust us!

10% of European food waste is caused by the misinterpretation of this date. Tell your friends about this important distinction between TMC and expiration date. Awareness will save the world.

È possibile tenerlo in frigorifero ma non necessario in quanto il ghi contiene solo grassi, come l’olio di oliva.
ATTENZIONE: se entra acqua o umidità si formerà la muffa, chiudere sempre molto bene il tappo e usare sempre utensili puliti e asciutti.

No, it is produced in the Czech Republic with grass-fed milk from the same country or from Holland.

All our products are suitable during pregnancy, except for Pure Biltong and Kaminwurz, due to their seasoning.
Pure Jerky is cooked, not raw meat, so there's no problem.

The only caution is Chokkino because it contains caffeine
A cup of Chokkino espresso contains only 11 mg of caffeine (an espresso coffee contains 80 mg)
EFSA's recommended daily limit of caffeine for pregnant women is 200 mg
Caffeine is naturally present in cocoa, and therefore also in chocolate. However, chocolate contains less caffeine than cocoa powder.
Cocoa powder contains less cocoa butter and therefore the caffeine is "concentrated"

INGREDIENTS
2 kg of chuck roast
(in Italy it is the royal, which includes the muscles of the animal's neck up to the fifth vertebra)
Ghi
Grasso di manzo (chiedete al macellaio un pezzo del grasso che sta intorno al rene, potete conservarlo in freezer)
Salt, pepper and spices

PROCEDURE

Turn on the oven to 165°C
Dry the meat loon with paper towels and place it in a baking dish
Massage the meat with a little ghi on all sides
Salt generously on all sides
Pepper (I never put pepper in)
Cut the beef fat into small cubes and place them on top of the meat
Add rosemary
Chiudere la teglia con l’alluminio o con il suo coperchio
Cook for 4 hours (one hour for every 500 g of meat, so if you have a 1 kg piece, 2 hours will be enough)
At the end of this time, remove the pan from the oven and raise the temperature to 220°C
With two forks, fillet the meat and mix it well with the gravy
Place the pan back in the oven for 25 minutes without a lid
This step is not mandatory, the meat is already delicious after the first cooking, the second one at 220°C makes it roast and brown the meat

I fell in love with this recipe and I make it so often because it comes out so good and most importantly it is "zero slamming" so I gave myself the 33 cm ceramic pan with lid from Le Creuset, wonderful.

INGREDIENTS
4 eggs
90 g of Fluffy Pancakes
50 ml of milk
30 g of ghi
40 g erythritol
1/2 teaspoon of yeast
Raspberries to taste

PROCEDURE

Separate the yolks from the egg whites and whip the latter to stiff peaks.
To the yolks add the milk and ghee, emulsify.
Combine erythritol, fluffy pancakes and baking powder, mixing with a whisk.
Incorporate the gently beaten egg whites.
Pour into an 18-cm mold, add raspberries.
Bake in a ventilated oven at 180° for 36-40 minutes. Stick test always recommended.

INGREDIENTS
2 large zucchini
2 eggs
100 g parmesan cheese
50 g oatmeal
50 ml milk
20 ghi

PROCEDURE
Salt and pepper
Preheat the oven to 200°.
Using whips, beat eggs well until frothy
Add the milk and the melted ghi
Beat a few more moments
Incorporate parmesan cheese, salt and pepper always using electric whips
Sifting it, to avoid lumps, also add the oatmeal
After obtaining a smooth and uniform mixture, add the zucchini cut into rounds as fine as possible
Place all in a 15-cm rectangular mold lined with baking paper
Bake 35 to 40 minutes
